Yam Surprise Puffs
Pineapple adds a pleasant sweetness to these crispy, baked, yam puffs.

Ingredients:
- 2 cups warm, mashed yams
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons margarine or butter, melted
- 6 pineapple chunk pieces
- 2 1/2 cups Kellogg's Corn Flakes® cereal Buy Now
Directions:
1. In medium mixing bowl, combine yams, seasonings and margarine. Mix well.
Using 1/6 mixture, shape into ball around pineapple chunk. Repeat with remaining
mixture and pineapple.
2. Place KELLOGG'S CORN FLAKES cereal in shallow bowl or pan. Roll potoato
balls in crumbs to coat. Place on baking sheet or in shallow pan coated with cooking
spray.
3. Bake at 350° F about 20 minutes or until lightly browned and hot. Serve hot.
For added flavor and crispness, drizzle with additional melted margarine before baking.
