Wagon Wheel Corncake

A fun and delicious one-dish meal for your next Sunday brunch! Kids of all ages love the look and taste of this whimsical "wagon wheel" made of veggie-studded cornbread and sausage. It's sure to become a family tradition. Yee-ha!

Ingredients:

  • 2/3 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup Kellogg's® All-Bran® Original cereal
  • or 1/2 cup Kellogg's® All-Bran® Bran Buds® cereal Buy Now
  • 1/2 cup whole kernel corn
  • 1/2 cup fat-free milk
  • 2 tablespoons finely chopped onion
  • 1 tablespoon finely chopped green bell pepper
  • 2 tablespoons vegetable oil
  • 1 egg
  • 6 fully cooked, breakfast sausage links

Directions:

1. Stir together flour, baking powder and salt. Set
aside.

2. In large mixing bowl, combine remaining ingredients except sausage links. Add
flour mixture, stirring only until combined. Spread evenly in 9-inch pie pan coated
with cooking spray. Arrange sausage links evenly over batter to resemble spokes of
wheel.

3. Bake at 400° F about 25 minutes or until golden brown. Cut into wedges and serve
hot.

Yield: 6 slices
