Vegetarian Quick Chili

Ingredients:

  • 12 oz rice of choice
  • 2 tbsp olive oil
  • 2 shallots, diced
  • 3 garlic cloves, minced
  • 1 pkg
  • 2 oz green mild chilies
  • 1 tbsp cilantro
  • 14.5 oz fire-roasted tomatoes, diced
  • 1 15 oz can white beans, drained
  • 1 12 oz can vegetable broth

Directions:

Prepare rice according to directions on package. In a separate pan, heat oil over medium heat. Add shallots and garlic and sauté. Next add Recipe Crumbles, green chilies and cilantro. Heat Recipe Crumbles according to stovetop directions on package. Add tomatoes, beans and vegetable broth. Simmer until all flavors are incorporated.
