Cream Cheese Pie with Tropical Fruit

Kellogg's® Special K® Red Berries cereal makes a tasty crust for this low-fat cheesecake-like pie.

  • 2 cups Kellogg's® Special K® Cereal Red Berries
  • 2 tablespoons seedless strawberry jam

  • 2 packages (8 oz. each) fat-free cream cheese, softened
  • 3/4 cup sliced ripe banana (about 1 medium)
  • 1/2 cup sugar
  • 1/2 cup refrigerated egg substitute
  • 1 teaspoon vanilla

  • 1 kiwi
  • 2 cups chopped fresh pineapple
  • 2 tablespoons seedless strawberry jam


1. In mixing bowl, combine KELLOGG'S SPECIAL K Red Berries cereal and 2 tablespoons jam. Spread on bottom and 1 inch up sides of 9-inch pie plate coated with cooking spray. Set aside.

2. In medium mixing bowl beat cream cheese, banana, sugar, egg substitute and vanilla on medium speed of electric mixer until smooth. Pour into prepared crust.

3. Bake at 325° F about 40 minutes or until set. Cool completely.

4. To make Fruit Topping, peel kiwi, quarter lengthwise and slice. In small bowl combine kiwi, pineapple and 2 tablespoons jam. Serve over Cheese Pie. Store in refrigerator.
