
Tomato-Watermelon Salad

Ingredients:
- 3 cups cut-up watermelon, seeds removed
- 1 medium yellow, orange or red ripe tomato, cored and cut into 1-inch pieces
- 1 tablespoon chopped fresh mint or 1 teaspoon dried mint leaves
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 3 cups torn fresh spinach or torn romaine lettuce
- 1 1/4 cups Kellogg's® Smart Start® Strong Heart Antioxidants cereal Buy Now
- 1/3 cup crumbled feta cheese
Directions:
1. In large bowl toss together watermelon, tomato and mint. Drizzle with olive oil and vinegar. Gently toss to combine.
2. On 6 small serving plates arrange spinach. Top with watermelon mixture. Sprinkle with KELLOGG'S SMART START ANTIOXIDANT cereal and cheese.
