
Sweet Potato Bake with Cracklin' Oat Bran®

Ingredients:
- 2 cans (24 oz. each about 3 1/3 cups) sweet potatoes, drained and mashed
- 5 tablespoons butter or margarine, divided
- 1/4 cup orange juice
- 1/2 teaspoon salt
- 3 tablespoons brown sugar, divided
- 2 cups miniature marshmallows, divided
- 1 cup Kellogg's® Cracklin' Oat Bran® cereal Buy Now
- 1/4 teaspoon cinnamon
Directions:
1. In large mixing bowl, combine sweet potatoes, 4 tablespoons of the
margarine, orange juice, salt and 2 tablespoons of the brown sugar. Beat until
smooth. Stir in 1 cup of the marshmallows. Spread in 10 x 6 x 2-inch (1
1/2-quart) glass baking dish coated with cooking spray. Top with remaining
marshmallows.
2. Melt remaining 1 tablespoon margarine. Combine with KELLOGG'S CRACKLIN'
OAT BRAN cereal, remaining 1 tablespoon brown sugar and cinnamon. Sprinkle
over marshmallows.
3. Bake at 350° F about 30 minutes or until thoroughly heated.
