Stuffed Poblanos

  • 1 tbsp olive oil
  • 6 small white potatoes, diced
  • 2 small onions, diced
  • salt and pepper to taste
  • 2 cups
  • 2 eggs, beaten
  • 4 poblano peppers


Preheat oven to 450 degrees. Heat olive oil in a large skillet over high heat. Add potatoes, onions and garlic to pan. Cook until the potatoes are just about tender. Turn off the burner. Add salt, pepper and Recipe Crumbles(TM). Cover the pan to let mixture sit. Place potato mixture in a mixing bowl. Add egg. Stir to combine. Slit peppers top to bottom to remove the insides. Fill each pepper with potato mixture. Place each pepper in a baking dish, slit side up. Bake at 450 until the raw egg is cooked and the RECIPE CRUMBLES reach an internal temperature of 160 degrees.

For vegans, this can be made without the eggs.

For the perfect sauce mix a half a jar of garlic Alfredo sauce with one cup of water and two veggie bouillon cubes. Mix constantly over medium heat. It's delicious!
