Smoked Gouda with Pineapple Salsa

  • 1 cup finely chopped fresh pineapple
  • 1/3 cup apricot or pineapple preserves
  • 1/4 cup finely chopped red or green onions
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice

  • 8 ounces smoked Gouda cheese, thinly sliced


1. In small bowl stir together pineapple, preserves, onions, cilantro and lime juice. Refrigerate at least 1 hour to blend flavors.

2. Top crackers with cheese and pineapple mixture.
