  • 2/3 cup chopped, pitted, Kalamata olives
  • 1/3 cup chopped roasted red peppers
  • 3 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon red wine vinegar
  • 1 garlic clove, minced

  • 8 ounces smoked Gouda cheese, thinly sliced


1. In small bowl stir together olives, peppers, oil, parsley, vinegar and garlic. Let stand at room temperature for 1 hour to blend flavors.

2. Top crackers with cheese and olive mixture.
