
Smoked Gouda with Olive Relish

Ingredients:
- 2/3 cup chopped, pitted, Kalamata olives
- 1/3 cup chopped roasted red peppers
- 3 tablespoons olive oil
- 2 tablespoons chopped fresh parsley
- 1 teaspoon red wine vinegar
- 1 garlic clove, minced

- 8 ounces smoked Gouda cheese, thinly sliced
Directions:
1. In small bowl stir together olives, peppers, oil, parsley, vinegar and garlic. Let stand at room temperature for 1 hour to blend flavors.
2. Top crackers with cheese and olive mixture.
