Shredded Apple Muffins

Ingredients:

  • 1 1/2 teaspoons sugar
  • 1/4 teaspoon cinnamon
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon nutmeg
  • 3 1/2 cups Kellogg's Raisin Bran® cereal Buy Now
  • 1 1/2 cups nonfat milk
  • 2 egg whites
  • 3 tablespoons vegetable oil
  • 1 cup shredded, unpeeled red apples
  • 2 ounces Neufchatel cheese

Directions:

1. Combine the 1 1/2 teaspoons sugar and cinnamon. Set aside for topping.

2. Stir together flour, the 1/2 cup sugar, salt, baking powder and nutmeg. Set aside.

3. In large mixing bowl, combine KELLOGG'S RAISIN BRAN cereal and milk. Let stand 2 minutes or until cereal is softened. Add egg whites and oil. Beat well. Stir in apples. Add flour mixture, stirring only until combined. Portion batter evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray. Cut cheese into 12 cubes. Press cheese cube into top of batter in each muffin-pan cup. Sprinkle batter with sugar-cinnamon mixture.

5. Bake at 400° F about 23 minutes or until golden brown. Serve warm.
