Salmon Patties with Corn-Avocado Relish

Salmon Patties with Corn-Avocado Relish

This tangy, refreshing relish of avocado, tomatoes, corn and green onions, provides a nice flavor contrast to the savory, salmon patties.

  • Relish
  • 1 avocado, pitted, peeled and finely chopped (about 1 3/4 cups)
  • 2 medium plum tomatoes, chopped (about 1 cup)
  • 1/2 cup frozen whole kernel corn
  • 2 green onions, sliced (about 1/4 cup)
  • 2 tablespoons lemon juice or lime juice
  • 1/2 teaspoon cumin or chili powder
  • Salmon Patties
  • 1 egg, slightly beaten
  • 2 tablespoons fat-free milk
  • 1 tablespoon prepared mustard
  • 1 teaspoon dried dill weed
