Pumpkin Nut Bread

A sweet, hearty quick bread redolent with the scents of allspice, cinnamon and vanilla. This old-fashioned pumpkin nut bread is simply perfect for the holidays and makes a lovely, gift ? either for a friend or for yourself!

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 cup butter or margarine, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1 cup canned pumpkin
  • 1 cup Kellogg's® All-Bran® Original cereal
  • 1/2 cup chopped nuts


1. Stir together flour, baking powder, soda, salt and spices. Set aside.

2. In large mixing bowl, beat margarine and sugar until well combined. Add egg, milk and vanilla. Beat well. Stir in pumpkin, KELLOGG'S ALL-BRAN cereal and nuts. Add flour mixture. Mix until thoroughly combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray.

3. Bake at 350°F about 50 minutes or until wooden pick inserted near center comes out clean. Remove from pan. Cool completely on wire rack before slicing.
