Pineapple Bran Muffins

  • 1 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons firmly packed brown sugar
  • 1 egg
  • 2 cups Kellogg's® Cracklin' Oat Bran® cereal Buy Now
  • 1/3 cup fat-free milk
  • 1/4 cup vegetable oil
  • 1 can (8 oz. 1 cup) crushed pineapple in juice


1. Stir together flour, baking powder, salt, and sugar in medium mixing bowl.
Set aside.

2. In large mixing bowl, beat egg slightly. Add KELLOGG'S CRACKLIN' OAT BRAN
cereal, milk, oil, and pineapple, including juice. Stir to combine. Let stand
about 10 minutes or until cereal is softened. Stir again.

3. Add flour mixture, stirring only until combined. Portion batter evenly
into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.

4. Bake at 400° F about 20 minutes or until muffins are golden brown. Serve
