Peanut Bread

Why spread the peanuts on, when you can bake them in? This classic bran quick bread gets a thoroughly updated and kid-friendly profile from a whole cup of protein-rich chopped peanuts. With a boost of fiber from All-Bran® cereal, it's a treat that can't be beat!

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup Kellogg's® All-Bran® Original cereal
  • or 1 cup Kellogg's® All-Bran® Bran Buds® cereal Buy Now
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons margarine or butter, melted
  • 1 1/4 cups milk
  • 1 cup chopped peanuts

Directions:

1. Stir together flour, KELLOGG'S ALL-BRAN cereal, sugar, baking powder, soda and
salt. Set aside.

2. In large mixing bowl, beat egg, margarine and milk. Add cereal mixture, stirring only
until combined. Stir in peanuts. Spread evenly in 9 x 5 x 3-inch loaf pan coated with
cooking spray.

3. Bake at 350° F about 50 minutes or until wooden pick inserted in center comes out
clean. Cool 10 minutes. Remove from pan and cool completely on wire rack.

Yield: 1 loaf, 16 slices
