Peachy Snack Cake

Ingredients:

  • 2 tablespoons butter or margarine, melted
  • 1/4 cup firmly packed brown sugar
  • 1 1/2 cups Kellogg's Raisin Bran® cereal Buy Now
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup butter or margarine, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 can (16 oz) sliced cling peaches, drained, cut into bite-size pieces
  • 1 1/2 cups Kellogg's Raisin Bran® cereal Buy Now

Directions:

1. In small mixing bowl, combine butter, brown sugar and the 1 1/2 cups KELLOGG'S RAISIN BRAN cereal. Set aside for topping.

2. Combine flour, baking powder, salt and spices. Set aside.

3. In medium-size bowl, beat together butter, granulated sugar and eggs until well combined. Stir in peaches. Add flour mixture and remaining 1 1/2 cups cereal, stirring until combined. Spread evenly in 9 x 9 x 2-inch baking pan coated with cooking spray. Sprinkle with prepared topping.

4. Bake at 350°F about 30 minutes or until cake tests done. Serve warm or cold.
