Peach Coffeecake

Each piece of this fabulous, moist coffeecake is flecked with chunks of juicy peach. Serve it warm with a cup of freshly brewed coffee or a glass of fat-free milk.

Ingredients:

  • 2 cups Kellogg's® All-Bran® Complete® Wheat Flakes cereal Buy Now
  • 3/4 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup butter or margarine, softened
  • 3/4 cup sugar
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1/4 cup fat-free milk
  • 1 can (16 oz.) sliced peaches, well-drained and diced

  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

Directions:

1. In medium bowl combine KELLOGG'S ALL-BRAN COMPLETE Wheat Flakes cereal, flour, baking powder, 1 teaspoon cinnamon and salt. Set aside.

2. In large mixing bowl beat together butter and 3/4 cup sugar on
medium speed of electric mixer until thoroughly combined. Add egg whites and vanilla, beating
until smooth. Beat in half of the cereal mixture. Add milk; mix well. Beat
in remaining cereal mixture. Gently mix in peaches. Spread batter
evenly in 8 x 8 x 2-inch baking pan coated with cooking spray. Sprinkle with
2 tablespoons sugar and 1 teaspoon cinnamon.

3. Bake at 375° F about 25 minutes or until toothpick inserted in center of
cake comes out clean. Serve warm.
