No-Bake Fruitcake with Bourbon

Ingredients:

  • 1 cup raisins
  • 1 cup chopped pitted dates
  • 1 cup chopped mixed candied fruit
  • 1 cup orange juice
  • 3/4 cup bourbon
  • 1/4 cup maple syrup or maple-flavored syrup
  • 2 tablespoons grated orange peel
  • 8 cups Keebler® Grahams Original Buy Now
  • 2 cups chopped pecans
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon mace
  • 1/4 teaspoon cloves
  • Bourbon

Directions:

1. In medium bowl stir together raisins, dates, candied fruit, orange juice, 3/4 cup bourbon, syrup and orange peel. Let stand at room temperature for 30 minutes.

2. In very large bowl combine graham crumbs, pecans, cinnamon, nutmeg, mace and cloves. Stir in fruit mixture. Press firmly into two 8 x 4 x 2-inch loaf pans. Cover each with cheesecloth. Sprinkle with additional bourbon. Tightly cover with foil. Refrigerate for 2 to 8 weeks, sprinkling additional bourbon on cheesecloth once a week.
