Jelly Scones

Just like the traditional English pastry, only better! These lovely scones feature the goodness of All-Bran® cereal baked right in, and a lovely dash of jam tucked inside. Serve them with fresh butter, clotted cream and a steaming pot of tea.

  • 1 3/4 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/4 cup margarine or butter
  • 2 eggs
  • 1/3 cup half and half
  • 1/4 cup plum or other jam
  • 1 tablespoon water
  • 1 tablespoon sugar
  • 1/2 cup Kellogg's® All-Bran® Original cereal


1. In medium mixing bowl, combine flour, 1 tablespoon sugar, baking powder and
salt. Add KELLOGG'S ALL-BRAN cereal. Using pastry blender, cut in margarine until
mixture resembles coarse crumbs. Set aside.

2. Reserve 1 tablespoon egg white. Beat remaining eggs with half and half. Add to
cereal mixture, stirring only until combined.

3. Turn dough out on lightly floured board and knead gently about 5 times. Roll out
into 12 x 9-inch rectangle, 1/8 inch thick. Cut into twelve 3-inch squares. Put
1 teaspoon jam in center of each square. Fold diagonally in turnover fashion. Seal
edges and crimp with fork. Beat reserved egg white with water. Brush over scones.
Sprinkle with remaining 1 tablespoon sugar. Place on baking sheet coated with
cooking spray.

5. Bake at 450° F about 10 minutes or until golden brown. Serve immediately with
butter, if desired.
