Hungarian Scalloped Veggie Beef

- 6 oz elbow macaroni
- 1 medium or large onion
- 1/3 stalk fresh celery leaves only, washed and dried
- 1 tbsp vegetable oil
- 1 box
- 8 oz tomato sauce
- 2 slices high-quality American or vegan cheese
Prepare macaroni, being sure to not overcook. Finely chop onion and celery leaves. In a wide frying pan, heat the vegetable oil on medium heat and add in chopped onion. Cover and simmer until tender. Add the crumbles and celery leaves and replace cover. Cook according to package directions. Add tomato sauce. Cover and simmer another 2 to 3 minutes. Add drained macaroni and mix well. Break each cheese slice into 6 large pieces. Top the mixture with cheese, leaving space between the pieces. Cover and cook until cheese is melted. Season to taste with salt and pepper, if desired.
