Harvest Bars

A bit like a cookie and a bit like a cake--that's the fun of this homey baked bar. The shredded apple, zucchini and carrots add moisture and sweetness.

Ingredients:

  • 2 cups Kellogg's® Rice Krispies® cereal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 egg whites
  • 1/4 cup vegetable oil
  • 1 cup firmly packed brown sugar
  • 1 teaspoon vanilla
  • 1/2 cup shredded carrots
  • 1/2 cup shredded zucchini
  • 1/2 cup shredded red apples
  • 1/4 cup finely chopped walnuts
  • 2 teaspoons powdered sugar

Directions:

1. In large mixing bowl, combine KELLOGG'S RICE KRISPIES cereal, flour,
baking powder, soda, salt and cinnamon. Set aside.

2. In medium mixing bowl, beat together egg whites, oil, brown sugar and
vanilla. Stir in carrots, zucchini, apples and nuts. Add to cereal mixture, mixing
until thoroughly combined. Spread in 13 x 9 x 2-inch baking pan coated with
cooking spray.

3. Bake at 350° F about 20 minutes or until golden brown and wooden pick
inserted in center comes out clean. Cool in pan on wire rack. Sift powdered
sugar over cookies. Cut into 3 x 1 1/2-inch bars. Store covered in refrigerator.

Yield: 24 bars
