Gyro Burger with Tzatziki Sauce

Ingredients:
- 1/2 cup cucumber, peeled, seeded and shredded
- 1/2 cup plain low-fat yogurt
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1 garlic clove, minced
- 1/3 cup cole slaw mix
- 1 hamburger bun
- 1 MorningStar Farms® Grillers Prime® Veggie Burgers Buy Now
- 2 tomato slices
- 5 hot-pepper rings
- 5 kalamata olives
Directions:
For tzatziki sauce: In a small bowl combine cucumber, yogurt, lemon juice, salt and garlic. Mix well. Let mixture rest for at least 1 hour before serving. For burgers: In a medium-size bowl mix cole slaw with 1 tablespoon tzatziki sauce. Toast the hamburger bun. Prepare veggie burger according to package instructions. Place veggie burger on bottom bun and top with cole slaw mixture, tomato slices and top bun. Serve with hot-pepper rings and Kalamata olives on the side.
