Fruit Nut Bread - Low Fat

Just like you remember it - only better! We've cut some fat and added a boost of fiber to this classic quick bread recipe, which is bursting with raisins, dates and the dark, sweet taste of molasses. Buttermilk adds a pleasing tang. A perfect treat for breakfast or afternoon tea.

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups Kellogg's® All-Bran® Original cereal
  • 1/4 cup chopped dates
  • 1/4 cup raisins
  • 1/4 cup light molasses
  • 1 cup buttermilk or sour milk
  • 1 egg, slightly beaten

Directions:

1. In large mixing bowl, stir together flour, sugar, soda and salt. Add KELLOGG'S
ALL-BRAN cereal, dates and raisins. Set aside.

2. Combine molasses, buttermilk and egg. Beat well. Add to cereal mixture,
stirring only until combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with
cooking spray.

3. Bake at 350° F about 45 minutes or until wooden pick inserted near center comes
out clean. Cool 10 minutes in pan. Remove from pan and cool completely on wire
rack.

Yield: 1 loaf, 16 slices
