Enchiladas

Ingredients:

  • 1 tsp olive oil
  • 1 pkg
  • 1 pkg taco seasoning
  • 2/3 cup water
  • 1 can vegan refried beans
  • 1 large onion, diced
  • 1 pkg colby-jack cheese, shredded
  • 2 cans enchilada sauce
  • 12 low-carb tortilla wraps
  • sour cream to taste
  • 1 avocado, sliced

Directions:

Preheat oven to 350 degrees. Heat olive oil over medium heat in a large frying pan. Add crumbles, taco seasoning and water to pan. Heat according to Recipe Crumbles directions on package. Layer desired amount of Recipe Crumbles mixture, beans, onion, cheese and enchilada sauce on each tortilla. Spray a 3-quart baking dish with non-stick cooking spray. Place rolled tortillas, seam-side down, in dish. Cover tortillas with remaining enchilada sauce. Sprinkle with cheese. Bake until cheese melts. Remove from oven and top with sour cream and avocado.
