Cranberry Salsa

Made with dried apricots, frozen cranberries, jalapeño peppers and fresh pineapple, then embellished with crunchy walnuts, this salsa adds pizzazz to a party buffet.

Ingredients:

  • 2 cups dried apricot halves
  • 1 1/2 cups frozen cranberries (6 oz.)
  • 1 cup chopped fresh pineapple
  • 2 fresh jalapeño peppers, halved and seeded
  • 3 tablespoons sugar
  • 1 teaspoon cider vinegar
  • 1 teaspoon ground ginger
  • 1/4 cup chopped walnuts, toasted

Directions:

1. In food processor combine apricots, cranberries, pineapple, jalapeño peppers, sugar, vinegar and ginger. Pulse to combine and coarsely chop. Transfer to serving bowl. Cover and refrigerate for 1 hour to blend flavors.

2. Stir walnuts into cranberry mixture. Serve with KEEBLER TOASTEDS Harvest Wheat crackers.
