Cheeztuna Croquettes

With a crisp outside and moist inside, croquettes remain a dinner time favorite.

  • 2 cups
  • 2 small cans flaked tuna
  • 1 1/2 teaspoons grated onion
  • 1 tablespoon minced parsley
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 1/4 cup butter or margarine
  • 1/4 cup flour
  • 1 cup milk
  • 1 egg
  • 1 tablespoon water
  • oil or fat for frying


1. Prepare fine crumbs. Blend 1 1/4 crumbs with tuna, onion, parsley, lemon juice and salt. Melt butter or margarine over low heat, stir in smoothly mixed flour and milk; cook over low heat, stirring constantly, until mixture boils and is
very thick. Remove from heat and blend in tuna mixture.

2. Refrigerate until chilled, about 2 hours. Shape mixture into eight cylinders about 3 inches long. Roll into remaining crumbs, then in egg beaten with water and again into crumbs. Fry in hot fat until golden brown, about 2 minutes. Drain on absorbent paper in warm place. Serve with lemon wedges or fish sauce.
