1. Stir together flour, baking powder, salt, cinnamon and ginger. Set aside.
2. In large mixing bowl, beat eggs slightly. Stir in sugar and oil. Add
carrots and cereal. Mix well. Let stand 10 minutes.
3. Add flour mixture and walnuts. Mix until well combined. Pour into greased 8 x 8 x 2-inch baking pan.
4. Bake in oven at 350° F about 45 minutes or until wooden pick inserted near center comes out clean. Cool completely. Spread with cream cheese frosting.
