Bran Jam Muffins

Ingredients:

  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/3 cup butter or margarine, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 cup Kellogg's Raisin Bran® cereal Buy Now
  • 1/2 cup milk soured with 1 teaspoon lemon juice
  • 1/2 cup strawberry jam

Directions:

1. Stir together flour, soda, salt, cinnamon and nutmeg. Set aside.

2. In large-size mixing bowl beat butter and sugar until light and fluffy. Add egg; beat well. Mix in cereal. Add dry ingredients alternately with milk; beat well after each addition. Gently fold jam into batter. Do not beat. Portion batter evenly into paper-lined 2 1/2-inch muffin-pan cups.

3. Bake at 400° F about 20 minutes or until tests done. Serve warm.
