Black Bean Breakfast Burritos (BBBBs)

Stack tortillas on a microwave-safe plate and heat on high for 15 to 20 seconds. Remove tortillas from microwave. Place one tortilla on each of four plates. Spray non-stick skillet with cooking spray. In a small bowl, season egg whites with salt and pepper. Whisk with a fork. Cook egg whites over medium-high heat. Divide eggs into four portions and place a portion on each tortilla. Sprinkle eggs with a portion of shredded cheese. Cook veggie burger according to microwave directions on package. Cut cooked burgers in half. Lay two veggie burger halves on each serving of eggs. Top with your favorite salsa, and fold.

Notes:
Depending on the nutritional content of your low carb tortillas (mine have 70 calories each), these warm, hearty breakfast wraps are only 300 calories each, boasting 10-11g fiber and 21g protein. Talk about satisfying!
