Applesauce Raisin Coffee Cake

Applesauce gives this lovely coffee cake a moist, rich and delicate texture, while cinnamon, nutmeg and cloves offer a fragrant, spicy aroma. It's perfect for pairing with a cappuccino or Viennese roast coffee. Enjoy it for breakfast or a late-afternoon snack. Yum!

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1 cup Kellogg's® All-Bran® Original cereal
  • 1 cup unsweetened applesauce
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 cup raisins
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Directions:

1. Stir together flour, the 1/4 cup sugar, baking powder, salt and spices. Set aside.

2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal, applesauce, egg, oil
and raisins. Let stand about 5 minutes or until cereal softens. Beat well. Add flour
mixture, stirring only until combined. Spread in 8 x 8 x 2-inch baking pan coated with
cooking spray. Combine remaining sugar and cinnamon. Sprinkle evenly over coffee
cake.

3. Bake at 400° F about 25 minutes or until wooden pick inserted near center comes
out clean. Serve warm, cut in bars or squares.
