Apple Cinnamon Quick Bread

Ingredients:

  • 1 1/2 cups
  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 cup peeled chopped apple (about 1 large)

Directions:

1. In large bowl stir together crackers, flour, sugar, baking powder and salt.

2. In small bowl combine eggs, milk and oil. Add to cracker mixture. Stir until just combined. Fold in apple.

3. Spread in greased 8 x 4 x 2-inch loaf pan. Bake at 350°F for 55 to 60 minutes or until toothpick inserted near center comes out clean.

4. Cool in pan on wire rack for 10 minutes. Remove from pan. Cool completely.
