Apple Cinnamon Muffins

Ingredients:

  • 2 cups
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 egg, beaten
  • 1 cup low-fat plain yogurt
  • 1/4 cup vegetable oil
  • 1 cup peeled chopped apple (about 1 large)

Directions:

1. In large bowl stir together crackers, flour, sugar, baking powder and baking soda.

2. In small bowl combine egg, yogurt and oil. Add to cracker mixture. Stir until just combined. Fold in apple.

3. Spoon into 12 greased or lined muffins cups, filling each about 2/3 full. Bake at 400°F for 20 to 25 minutes or until toothpick inserted near center comes out clean. Cool in pan on wire rack for 5 minutes. Remove from muffin cups.
