Apple Butter Muffins

An apple a day is great especially when it's paired with All-Bran® cereal.

  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 3 tablespoons sugar, divided
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup Kellogg's® All-Bran® Original cereal
  • 1/2 cup skim milk
  • 2 egg whites
  • 3 tablespoons vegetable oil
  • 1 jar (11 oz.) apple butter
  • 1/4 teaspoon cinnamon
  • 1 sliced, small, unpeeled apple, cut into wedges


1. Stir together flours, 2 tablespoons of the sugar, baking powder and salt. Set aside.

2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg whites and oil. Beat well. Stir in apple butter. Add flour mixture, stirring only until combined. Portion batter evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray. Stir together remaining 1 tablespoon sugar and cinnamon. Sprinkle on top of muffin batter. Top with apple wedges.

4. Bake at 400°F about 25 minutes or until lightly browned. Serve warm.
